1 1/2 cups Sweet Corn (use frozen but thawed)
1/2 stick (or can use 1/3 c. softened butter)
3 Tbsp. sugar
1/8 tsp. salt
1/2 cup corn mesa flour
2 Tbsp. flour
In blender or food processor, combine 1 cup of corn and puree. In bowl, combine pureed corn, butter, salt, and sugar. Add mesa flour and white flour. Add 1/2 cup corn kernals. Shape each patty into 1/3 cup and press down on cookie sheet. Bake at 400 for 25 min. Flip and bake for additional 5 min. Garnish with Sour Cream, or Greek Yogurt, and Pico: avacado, chopped up roma tomatoes, cilantro, white onion, salt and pepper and lime juice.
