Pumpkin Waffles (Myndi)


1/2 cup flour
1/2 cup whole wheat flour
1/2 cup wheat germ
1 Tbsp. baking powder

1 tsp. coarse salt
1/4 tsp. ground cinammon
1/4 tsp. freshly grated nutmeg
1/4 tsp. ground ginger
5 Tbsp. butter (melted)
2 eggs
1 tsp. vanilla extract
1 cup milk

Heat waffle iron.  In a small bowl, mix flours, wheat germ, baking powder, salt, nutmeg, cinnamon, and ginger.  Set aside.
In a med. bowl, whisk together brown sugar, pumpkin puree, butter, eggs, vanilla, and 1/2 cup milk until well combined.  Stir in dry ingredients and mix to form a smooth batter.  Slowly add remaining 1/2 cup mile until batter is thin enough to pour into waffle iron.  Spoon  about 1/2 cup batter into iron and cook.  Serves 6 to 8.  Serve with yogurt, sryup, nuts, or fruit.
