Sweet Potatoes with Wilted Spinach (Crystal)

2 sweet potates diced into 1 inch pieces
salt & pepper
1 onion (yellow or red), diced
olive oil
2 tbsp honey
2 tbsp butter
spinach

Salt and pepper potatoes and drizzle olive oil on top. Mix oil and potatoes in bowl to coat potatoes with oil. Spread on baking sheet and roast in oven at 350 for 20 min. Remove from oven and toss in onions and mix together, return to baking sheet and roast for 20-30 min more, until tender. Transfer potato mixture to a bowl and drizzle honey and add butter, mix well. Add more or less honey/butter to taste.
Add in spinach leaves and the heat from mixture will wilt the spinach.

This is a must have--one of my new favorite side dishes, especially for fall. Enjoy!
